Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the flour and carob powder.
Add the eggs and coconut oil, mixing well.
Gradually add the water until the dough comes together to a point where it or no longer crumbly and can be rolled. Add more or less water depending on the flour you have chosen and any other substitutions you have made.
Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use a small round cookie cutter or the rim of a glass to cut out circles.
Place the circles on the prepared baking sheet. If you are using a stamp or adding words, stamp the cookie then freeze them for 10 minutes prior to baking in order to maintain the design.
Bake for 15-20 minutes, or until the treats are firm and slightly darker.
Allow the treats to cool completely on a wire rack before adding any filling or serving to your pup.
Filling Steps:
In a microwave safe container, add coconut oil and yogurt chips
Microwave in 30 second increments, stirring well, until fully melted
At this stage you have 2 choices:
Option 1: pour the mixture into a rimmed dish (about 9x9 or larger) and allow the mixture to cool and harden slightly before cutting out with cookie cutters and sandwiching between 2 cookies.
Option 2: allow the mixture to cool and harden until it is spreadable, then spread onto half a cookie with a knife or spatula before adding the top cookie to complete the sandwich

StorageIf you have used the filling above or a shelf stable filling like peanut butter, these treats can be stored at room temperature in an airtight container for about 10 days. If you have used a frozen or cold filling, these treats must be stored in the freezer or fridge respectively.
